Friand d’Anabel Langbein


To make 24 friands you will need:

• 1 c ground almond
• ½ c rice flour
• 1 ½ c icing sugar, sifted
• 5 egg whites
• 180g butter, melted
• grated zest of a lemon or orange
• strawberries, or other seasonal fruit


Preheat the oven to 160°C.

Melt the butter.

Grease some small muffin tins.

In a food processor, grind some almonds to obtain 1 cup of ground almond.

In a large bowl, mix the ground almond, rice flour and icing sugar.

Using a large metal spoon, stir in the egg whites.

Add the melted butter and the lemon or orange zest, and mix well.

Place a spoonful of the mixture in the muffin cavities.

Place a piece of strawberry, or any other seasonal fruit, on top of each cake.

Bake the friands for 25 to 30 minutes.
